Nourish (or Buddha) Bowls
Nourish (or Buddha) bowls are a great way of putting together some nutritious ingredients together in a bowl, drizzling your favourite dressing over the top and finding yourself with a really tasty meal! They are also a good way to use up leftovers in the fridge.
This is one of my favourite nourish bowl ‘bases’ to which you can add more of your preferred fresh clean foods. For example, vegetarians can add brown rice, quinoa and dukkah, and those who prefer a paleo style diet can add fish, eggs or chicken and top the bowl with nuts and seeds. I usually serve mine up with some seed crackers. A perfect way to eat a meal that is wonderful in its simplicity!
Ingredients:
kale leaves gently rubbed with a little extra virgin olive oil
fresh grated beetroot and carrot
finely sliced red cabbage
baby spinach leaves
a small handful of organic pepita seeds
1/2 cup of pomegranate seeds
Turmeric & Ginger Salad Dressing:
1/4 cup of tahini
1 teaspoon of turmeric powder
1 teaspoon of fresh grated ginger
3 tablespoons of fresh lemon juice
2 tablespoons of olive oil
1 teaspoon of raw honey
Whisk together all the ingredients, adding a little water if necessary, and season to taste.
Method:
Combine all the ingredients together gently except the pepita seeds. Add the turmeric & ginger dressing coating all the ingredients thoroughly. Top the bowl with the pepita seeds.
Serve your nourish bowl with seed crackers or paleo bread or enjoy it just as it is :)
