Pumpkin Seed Dip
Ingredients:
2 spring onions
1 clove garlic
1 red chilli
1/3 cup flaxseeds
1 cup roasted pumpkin (pepita) seeds
1 teaspoon Himalayan or Celtic sea salt
1/2 bunch of fresh coriander
¼ cup of soy mayonnaise or preferred mayonnaise
1 teaspoon ground cumin
1 teaspoon ground coriander seeds
Pepper to taste
2 medium oranges, juice and zest
1 small lemon, juice and zest
Extra virgin olive oil
Method:
Process shallot, garlic and chilli into a fine mince in food processor.
Add flaxseeds and pumpkin seeds and process again.
Cut coriander into food processor with scissors.
Add mayonnaise, spices, orange and lemon juices and zests – process to a fine spreading consistency.
Add more orange juice if necessary.
Place in a bowl and drizzle with olive oil.
Top with a sprig of coriander.
