Carrot & Coriander Fritters with Sweet Lemon Dressing

Ingredients:

50grms haloumi (greek cheese)
4 large carrots, coarsely grated
3 spring onions
1 cup fresh coriander leaves, coarsely chopped
1 tablespoon ground coriander
20 grams chickpea flour
2 eggs, lightly beaten
avocado or macadamia oil, for frying

 

Method:

  • Grate 50grms haloumi and add to carrots in a bowl.
  • Add onion, coriander, flour and eggs and mix well with pepper and salt.
  • Form into 12 round cakes and lay on a tray to chill for 30 mins.
  • Heat oil in a pan and fry fritters for 1-2 mins on each side and keep warm.
  • Drizzle with dressing and serve with a green salad.

 

Dressing –

Ingredients:

½ clove of garlic, crushed
½ tablespoon of rice malt syrup or coconut flower nectar
Pinch of Himalayan or sea salt
Finely grated zest and juice of one lemon
90 mls of extra virgin olive oil.

 

Method:

Combine all ingredients in a jar and shake well.
