Lamingtons (Paleo, Gluten & Sugar Free)

These paleo, sugar and gluten free lamingtons fit the bill when you want to take something to an Australia Day gathering that is healthier that the traditional version. And … they can of course be enjoyed at any time of the year! For other days, the cake recipe can be eaten on its own or covered with sliced strawberries or in a white chocolate icing. The recipe gives paleo and non-paleo options.
Ingredients:
Cake
3 large or 4 medium free range organic eggs
125grams of coconut syrup or raw honey (approximately 4 tablespoons)
1 teaspoon of vanilla powder or paste
250grams (2+1/2 cups) ground almonds or almond meal.
1 tablespoon of lemon juice
2 tablespoons of coconut oil (melted) or 30 grams of grass fed butter (non paleo)
2 level teaspoons of bicarb soda (non paleo)
Melted chocolate (see recipe below)
Desiccated coconut for coating lamingtons – placed in a small dish or bowl.
Chocolate
½ cup of coconut oil
½ cup of raw cacao powder
1-2 tablespoons coconut milk (you don’t make the chocolate too hard to set)
3 tablespoons of raw honey or coconut syrup
*Or if you are in short of time, buy a good quality organic dark chocolate instead.
Place coconut oil in a sauce pan on a low heat and gently melt. Stir the honey and cacao into the melted oil until well blended.
Method:
- Preheat oven to 160 degrees C.
- In food processor, add eggs, oil or butter, syrup or honey and vanilla and process until smooth and creamy.
- Add almond meal and baking powder and process again.
- Line a 20cm baking tin with baking paper on the base and sides.
- Spoon cake batter into tin and smooth top of mixture.
- Bake for 30 minutes or until firm and golden and cooked through.
- When cake is cooked, allow to cool to room temperature and then cut into small squares (this squares can be smaller than the usual lamington square as the mixture is rich).
- Using two forks, dip the cake squares into the melted chocolate and then roll in desiccated coconut.
- I usually then put the cake in a container in the fridge to allow the chocolate to set.
