Berry Protein Balls
Berry protein balls make a great summer snack that can be made in bulk and stored in the freezer so when you want something healthy you can grab one of these to recharge your energy and satisfy a sweet craving. Including berries in a protein ball is also a great way to eat seasonally during spring and summer in addition to the protein, good fats and antioxidants they contain. I also include some schisandra powder in mine for adrenal support but this is optional.
Ingredients:
1/2 cup of unflavoured hemp protein powder
1/2 cup of spelt flakes (or leave this out for a paleo version and replace with another 1/2 cup of hemp protein)
1/2 cup almond meal
1/3 cup of dessicated coconut
1/2 cup fresh or defrosted frozen raspberries, crushed
1 tablespoon of melted coconut oil
3 heaped teaspoons of berry powder (I use Clean & Green Wholefoods Blend – available from health stores)
1 teaspoon of Schisandra powder for adrenal support (I use Teelixir available from health stores) – this is optional.
Optional: for more sweetness add 2 teaspoons of rice malt syrup
Method:
- Place all ingredients into a mixing bowl and mix until well combined.
- Scoop out mixture and roll between your hands to create evenly sized balls.
- Options: you can roll them in white sesame seeds, dessicated coconut or more berry powder.
- Store in freezer for when needed!
