Quinoa & Avocado with Scrambled Eggs
Quinoa mixed with the scrambled eggs makes a protein rice meal for breakfast or any other meal.
Ingredients:
1 cup of cooked quinoa
¼ cup of basil pesto
3 free range or organic eggs, lightly beaten
1 avocado, peeled and sliced
1+1/2 tablespoons coarsely chopped basil and coriander
1+1/2 tablespoons finely grated parmesan or goats cheese
Method:
Pour hot water into frying pan to just cover bottom. Bring to a boil over medium-heat.
Stir in quinoa and pesto.
When warm, stir in eggs.
Using spatula swiftly scramble eggs.
Remove from heat and stir in avocado, basil and cheese.
Serves 2
