Apple & Cinnamon Slice

Ingredients:
Filling:
5 medium green apples, peeled and chopped
1 tablespoon lemon juice
Zest from 1 lemon
2 teaspoons of cinnamon powder
3 tablespoons sugar-free apricot jam (i.e. Dalfour Jam) or chia jam
Pastry:
2+1/2 cups organic rolled oats
1 cup desiccated coconut
1 cup wholemeal flour of choice i.e. buckwheat or spelt
1 teaspoon baking powder (aluminium free i.e. Red Mill)
2 heaped teaspoons organic honey or rice syrup
60ml macadamia nut oil or coconut oil
Method:
Make filling by combining the apples, lemon juice, cinnamon and zest into a deep pan.
Cook over a medium heat until the apples are soft.
Take off the heat and stir through the apricot jam.
Make pastry by combining all the ingredients.
Line the base of square baking tin with baking paper then take ¾ of the pastry and press it over the base of the tin.
Spoon the cooked apple mixture over the base then crumble the rest of the pastry over the top of the apple.
Bake in a preheated moderate oven (180 deg C) for 30 minutes or until golden.
