Warm Chia Pudding with Apple & Cinnamon
Warm chia pudding is a winter version of chia pudding. Chia seeds are high in protein, fibre and Omega-3s but this delicious recipe it is served warm with cinnamon (which assists in blood sugar regulation) and tart green apple.
Ingredients:
1+1/2 cups of coconut or almond milk
1-2 teaspoons of coconut oil (optional)
1/4 cup of chia seeds
1 teaspoon of vanilla powder or vanilla paste or 1/2 a vanilla bean, scraped
1-2 teaspoons of cinnamon powder
2 pan sauteed green apples or apricots (see recipe below)
toasted coconut flakes or activated buckwheat or other seeds
Method:
- Warm the coconut or almond milk with the vanilla and cinnamon, on the stove.
- Bring to a gentle simmer.
- Add the chia seeds and remove from heat, making sure you don’t overheat the chia.
- Stir occasionally and wait for the seeds to plump up.
- Add two teaspoons of coconut oil which will give a lovely richness to the mixture.
- Serve pudding in two bowls with sauteed apple, coconut or sheep’s yoghurt and something ‘crunchy’ on top.
Sauteed Apple (or Apricot)
Ingredients:
2 green apples, cut in half and seeded, or 2 ripe apricots cut in half and de-stoned.
a little bit of coconut oil
juice of half a lemon
Method:
- Place apples or apricots in a frying pan with coconut oil and saute for about five minutes.
- Turn the fruit over and cook for approximately another 3-4 minutes on the other side.
- Serve with chia mixture.
